Vegan Breakfast Tacos + Tofu Scramble Recipe (Oil-Free)

 

Hey! Here I'm sharing my easy oil-free vegan breakfast tacos, which includes my tofu scramble recipe!

My Breakfast TACOS + Tofu Scramble Recipe

Difficulty: Easy

Ingredients:


  • 1 block firm tofu
  • 1/2 cup unsweetened soy milk
  • 1/2 small onion - diced
  • 1/2 red pepper - diced
  • 1/2 tsp turmeric
  • 1/2 tsp pepper
  • Himalayan pink salt - to taste (optional)
  • Optional additions: spinach, kale, and/or mushrooms
Directions:

  • Saute onions and red peppers in water until soft
  • Crumble in the block of firm tofu
  • Add turmeric and pepper
  • Add soy milk
  • Stir over medium/high heat

Build the Taco:

I layer my breakfast tacos with my tofu scramble, vegan breakfast sausage cut up, salsa, avocado, vegan cheddar cheese, and cilantro.
